After School Snack Time: English Muffin Pizzas
My son’s school day is a little longer now at his new school, and his lunchtime is really early. I’ve tried packing him a snack so he can have it at dismissal, but that just doesn’t cut it. He wants something hot, gooey and delicious the moment he walks in the door. And that boy is starving after a fun-filled day of not one but 2 recesses.
So what I usually do is make him a grilled cheese, a panini, a quesadilla or something in the toaster oven. Quick snacks like this English Muffin pizza are his favorite. He can help make them in the toaster oven on the counter.
Panasonic recently sent me this new FlashXpress Toaster Oven to test out with my son. I have my favorite fancy toaster oven in my kitchen, but I needed a quick one for after school treats and for an upcoming camper restoration. I can’t wait to share some of those photos with you.
The FlashXpress Toaster Oven is a really great little toaster oven. It gets hot immediately and cooks super fast. It’s perfect to use when hungry little ones at your feet. And I know it’ll work great as a fast and most importantly lightweight toaster oven for our camper.
To make these little English muffin pizzas, I just topped them with leftover marinara sauce, shredded mozzarella and pepperoni. This little oven gets so hot, it makes the pepperoni nice and crisp super quick, just how my son likes them.

English Muffin Pizzas

- Thomas’ English Muffins
- Marinara
- Shredded Mozzarella
- Peperoni
- Any additional pizza toppings you like!
Directions:
Assemble pizza and toast in the toaster oven until cheese has melted and pizza has started to lightly brown.
Let cool before serving to kids!
