Breakfast Tostadas

breakfast tostadas

My son’s school is now in full swing, and he’s already come down with is first cold. It’s not too bad, just the sniffles. He didn’t have a fever so I sent him to school this morning, a little late.  He didn’t feel like eating that much, and wasn’t even interested in his cherries, so I decided to make something special to excite him.

So I made these quick and easy breakfast tostadas. Aren’t they cute! These are just some scrambled eggs on top of a tostada topped with avocado, cilantro, tomato and queso fresco cheese. They take all of maybe 5 minutes to make and are just as nutritious as they are pretty.

I’ve made these tostadas pretty simple, but you can make them  even more delicious by adding re-fried beans, spicy salsa and other fresh veggies. Just use your imagination, or simply clean our your fridge!

If you’re concerned about your eggs be sure to use Davidson’s Safest Choice pasteurized eggs.  “Davidson’s Safest Choice® Eggs are pasteurized in an all-natural, gentle water bath pasteurization process to eliminate the risk of Salmonella.
