Chicken Cacciatore Noodle Bake

This week is winding down, and I’m so glad that we got through it as a family. Everyone has been super busy with school, extra curricular and work. My son had his first science experiment yesterday. Because he’s just in fourth grade, they do presentations to the class, instead of the traditional science fair style.
He made a potato battery, and lit a small LED light to show the class. Everyone was super impressed, especially his proud parents. He actually did almost all the work completely by himself. Dad just helped him locate the materials he needed in the garage.
We’ve also had a few other fun things and celebrations this week plus a couple of baseball games. Our schedules have been packed but in a good way. And my home is definitely looking lived in and ready for a good cleaning this weekend.
Even though we have so little spare time, and eating fast food would be easier, I’m still cooking every night. We feel so much better when we eat homemade, good food. Not to mention it’s way cheaper too!
One of my favorite products for kid-friendly one dish easy supers is No Yolk Noodles. Their Broad Noodles are so versatile and can be made in many more recipes than just chicken noodle soup, although that’s an awesome use for them too!
Fun Recipe Ideas
You can use them in fun Asian dishes, Spicy Mexican dishes and healthy vegetable filled dishes too. Sesame noodle bowls is one of my family’s favorites. You just start by making fried chicken nuggets, using cornstarch instead of flour and make a sweet and sour sauce and toss it with the noodles. You can use my recipe here, and add the noodles, or this recipe.
For a Mexican inspired noodle skillet, take bite-sized pieces of chicken with chopped onion and bell pepper, a can of rinsed and drained black beans, some frozen corn and 2 chopped tomatoes. Add some taco seasoning. To make a sauce, add a little water and cream cheese. Then add cooked No Yolk noodles and toss together, yum!
You can also make these noodles a super healthy, light dinner by cleaning our your fridge, and taking whatever veggies you have on hand and mixing it with the cooked noodles. For a light creamy sauce, melt in a little low fat cream cheese. And for something a little less creamy, just use grated fresh garlic and a few teaspoons of either basil or sun-dried tomato pesto.
No Yolks noodles are a great healthy egg noodle alternative, made from egg whites and no cholesterol, and are low in fat and sodium. They always cook up smooth, firm and fluffy and stay that way in your favorite recipes. They also come in a variety of cuts for all types of recipes including Broad, Extra Broad, Fine, Kluski, Dumplings, and now Stir-Fry.
For this easy Chicken Cacciatore recipe, I used the dumplings, but you can also use the broad or extra broad noodles. I start with sautéing the chicken, bell peppers, onions and zucchini together. Then I add the garlic and marinara sauce before combining it with the cooked noodles in a large casserole dish.
This is a much simpler version of Chicken Cacciatore that’s so easy! Next you just bake it for a few minutes until the cheese is melty and lightly browned.

Chicken Cacciatore Noodle Bake
Yield: Serves 4
- 1 lb chicken breasts, cut in bite-sized pieces
- 1 large green pepper, chopped
- 2 medium zucchini, chopped
- 1/2 medium onion, chopped
- 1 clove garlic, minced
- 1 jar marinara sauce
- 1 (12oz) bag No Yolks noodles (broad, extra broad or dumplings)
- 1 cup shredded mozzarella cheese
- 1 tablespoon olive oil
- salt and pepper to taste
Heat oven to 400°. Salt and pepper chopped chicken. Saute chicken in large skillet over medium heat with olive oil until cooked through. Add onions, green bell pepper, zucchini and garlic. Continue to cook until vegetables are tender crisp. Add sauce and heat through.
Cook No Yolks noodles according to package directions. Combine chicken and vegetables in marinara with noodles in a large casserole dish. Top with shredded cheese.
Bake noodle dish at 400° for 15 - 20 minutes, or until cheese is lightly browned and bubbly.
