Chicken Melts with Jalapeño Lime Coleslaw and Spicy Mayo

This past weekend was so much fun for our family. We took our boat out for the first time this year and because it was so warm, we got to go tubing! The water was a little chilly, but not bad at all. We also tried fishing in our local lake, but we are terrible fishermen.

I have honestly only ever fished before in my granny’s stocked private pond, and the fish were super easy to catch. It was fun and exciting, but fishing in public lakes that are overgrown with aquatic plants is disappointing to say the least.

After a busy afternoon on the boat, we were all super hungry and tired when we got back home so I wanted to make something incredibly easy. Since March is Frozen Food Month, my freezer is stocked and ready to reach into and find something delicious and filling.

I recently discovered these amazing Sandwich Bros. Flatbread Pocket Sandwiches. They have sandwiches perfect for breakfast, snacks or quick and easy lunches. They’re high protein and less carbs. And best of all, my kids absolutely love them. Even my finicky little toddler adores these sandwiches because they’re easy to hold, nothing falls out of them, and they’re really, really tasty!

To go along with these tasty little chicken melt sandwiches I quickly made a jalapeño lime coleslaw and a spicy mayo for dipping. The coleslaw was super simple to make. I just started with one of those prepackaged bags off coleslaw mix and added some red onion, red bell pepper and jalapeño.

The mixture of sweet red peppers and spicy jalapeño peppers is so good! Then, I added a simple dressing made from a little mayonnaise, lime juice and salt and pepper. SO simple!

For the spicy mayonnaise dipping sauce I just added some hot pepper sauce and smoky cumin to mayonnaise with a little more lime juice. Then, I mixed that well and it was ready to go.

This slaw and dipping sauce make great accompaniments to the Sandwich Bros. Flatbread Pocket Sandwiches. But you can also serve them with a simple green salad and BBQ sauce, a chopped ranch salad and buffalo sauce for dipping, or whatever other delicious combination you can think of. Or, better yet just enjoy them as they are, because they are that good!

Ingredients:

Sandwich Bros. of Wisconsin Chicken Melt Sandwiches

For the Jalapeño Lime Coleslaw:

  • 1 (16 oz.) bag Cole Slaw mix
  • 2 - 3 jalapeños seeded, deveined and chopped
  • 1/3 cup chopped red bell pepper
  • 1/4 cup chopped red onion
  • 1/3 cup mayonnaise
  • the juice of 2 limes
  • salt and pepper to taste

For the Spicy Mayo:

  • 1/4 cup Mayonnaise
  • 2 - 3 dashes Hot Sauce
  • 1/4 teaspoon cumin
  • the juice of 1 lime

Directions:

Heat Sandwich Bros. of Wisconsin Chicken Melt Sandwiches per package directions.

Add all ingredients for coleslaw into a large bowl and mix well. Set aside.

Add all ingredients for spicy mayonnaise to a small bowl and mix well. Serve Chicken Melt Sandwiches with Jalapeño Lime Coleslaw and Spicy Mayonnaise for dipping.
