Chipotle Apple Butter Wings

Super Bowl Sunday will be here before we know it. This year, it’s scheduled on February 3, and I’m already testing out recipes for the big day. One of our must have football foods are hot wings. And while nothing beats a good old-fashioned hot wing, I love to play around with flavors to make new and unique flavor sauces to toss our wings in.

Today, I decided to make a sweet, smoky, spicy sauce that had complex flavors. To start, I used Musselman’s apple butter. The apple butter is not only sweet, but also has cinnamon and cloves that add even more flavor to this wing sauce. And don’t worry, these wings don’t taste like super sticky sweet apple butter because of all the other flavors I add.

For saltiness in the wing sauce I added soy sauce. It also helped thin out the sauce  a bit. For a bit of tanginess and slightly red color, I added tomato paste. The smokiness and heat comes from finely chopped chipotle chili peppers and adobo sauce. I also added garlic, well because everything tastes better with garlic.

To put the sauce really over the top, I added lots of melted butter. If you want to save on fat and calories, add warm chicken stock to thin out the sauce instead, or use half butter and half chicken stock.

Then I tossed my cooked wings (these were fried in the deep fryer, but I also love to grill them over low heat) in the sauce.

Ingredients:

For the Wings:
1 dozen chicken wings
salt and pepper
vegetable oil for frying

For the sauce:
1/4 cup melted butter
3 tablespoons Musselman's apple butter
1 tablespoon chopped chipotle chili peppers in adobo sauce
1 tablespoon soy sauce
1 teaspoon tomato paste
1 clove garlic, grated

Directions:

Heat oil for frying to 350°. Salt and pepper chicken wings. Fry until golden brown and crisp, about 10 minutes.

While wings are frying, combine all ingredients for sauce. Whisk well.

Combine wings and sauce and toss to coat. Serve warm.
