Jimmy Dean’s Delights Frittatas with Fresh Avocado, Tomato and Parsley

Last Thursday evening we were sitting together talking and my son says “Hey I don’t have school tomorrow and all next week because it’s spring break!” Neither me or my husband had a clue spring break was even this month. For some reason, we thought it was in April. We definitely felt like parents of the year.

The next hour my husband and I frantically planned out little things we could do with him after work each day. My husband is also taking off Friday so we can have a long weekend and get in some quality spring break time before school starts back.

Before that crazy Nor’easter hit (it even made it super cold here in Florida!), we did mini golf, went bowling, and took our bikes for a ride in the park. For the past few days we’ve been doing lots of fun things around the house like crafts, watching fun kids movies and gardening. We’re making plans for a small butterfly and vegetable garden this year. Both my kids love gardening, and it’s a great way to get them outside and playing in the dirt!

We’ve also been trying some new things in the kitchen. You know I always love quick, easy meals that are good for you. Especially when time is limited, like at breakfast. It’s not easy getting in a nutritious meal for the family, and getting out the door on time. But in our family we try to make it a priority.

That’s why I was so excited to try Jimmy Dean’s new Delights Bacon and Spinach Frittatas. These are so delicious, easy and best of all low carb! They are packed with 14g of protein per serving and are so filling. They also come in a Turkey Sausage & Veggies flavor that’s equally as amazing.

To go along with these little frittatas, I like to serve a halved avocado filled with diced tomato and garnished with fresh parsley, salt and pepper. It’s a perfect accompaniment to this low carb breakfast that adds even more nutrition and great flavor.

Directions:

Cook Jimmy Dean's Delights Bacon and Spinach Frittatas according to package directions.

Halve and remove pit of avocado. Fill with diced tomato and garnish with fresh Italian parsley and salt and pepper.

Serve and enjoy!
