Roasted Asparagus

This is my favorite side dish to make, especially on busy weekday nights. It is so tasty, and my family eats so much of it, I either buy the large bunch of asparagus from Sam’s or  from the grocery store. We eat it like candy. This is definitely the best way to cook asparagus. Use thinner stalks of asparagus for the best results. You could also toss them in any type of vinaigrette dressing before roasting for a great variation.

Roasted Asparagus

Ingredients:

Large Bunch of Asparagus
Kosher salt
Olive oil or any vinaigrette salad dressing

Directions:

Preheat oven to 400 degrees. Snap the woody ends off of the asparagus and wash. Place them in a baking dish and toss with olive oil or salad vinaigrette dressing.
Add Kosher salt and toss to coat. Cook asparagus for 10-15 minutes until it has started to wilt, but still has good color. Cooking time will vary greatly depending on size and quantity of asparagus.
