Bacon Egg and Spinach Salad

Just because sumer is over, doesn’t mean you can’t have salads anymore. In my family, we love eating hearty salads like this one year round. Served with fresh bread, and maybe even a bowl of simple soup, this makes the perfect light dinner for a busy weeknight.

For this salad, I start by crisping up some bacon and boiling my eggs. For perfectly crisp bacon, simply bake it in the oven at 400°. in 15 – 20 minutes your bacon will be perfectly crisp and ready for your salad.

Next I cook my eggs. For perfectly cooked boiled eggs, simply place the eggs in a saucepan and cover with water. Then bring the eggs to a boil. When the water comes to a rolling boil, add a lid to the pot and remove it from the burner. Wait ten minutes and then run eggs under cool water to cool before cracking.

After my bacon and eggs are done, I start assembling my salad. I start with a large bowl and a bunch of fresh spinach. Next I like to add sweet sliced onions. Then I add fresh before adding my bacon and eggs. For garnish, I like shredded Swiss cheese and some toasted slivered almonds.

For the dressing, you can buy a pre-prepared spinach salad dressing or make your own from scratch. We eat spinach salad so often, I usually just buy the pre-preared dressing from the produce department, but making your own is pretty simple.  Just start with equal parts dijon mustard, red wine vinegar and honey. For one salad, I do about 2 tablespoons of each. Then add a little minced shallot or garlic and salt and pepper to taste. Now either add a tablespoon of bacon drippings or olive oil and shake well.
