Chocolate Peppermint Cookies

Here is a delicious chocolate, chocolate chip and peppermint cookie that would be perfect to make for your family or for gifts. I used soft peppermint candies in these cookies, and roughly chopped them. You can cook them around 10 minutes for a softer cookie, and up to 14 minutes for a crunchier cookie.

Chocolate Peppermint Cookies

Ingredients:

1 cup butter, 2 sticks, softened
1/4 cup vegetable shortening
2 cups white sugar
2 large eggs
3/4 cup cocoa powder
2 cups flour
1/2 teaspoon kosher salt
1 teaspoon baking soda
2 teaspoons vanilla
2 cups chocolate chips
1 cup chopped soft peppermint candies

Directions:

1. Preheat oven to 375 degrees. Add softened butter, shortening and sugar to stand mixer. Cream until light in color. Add eggs, one at a time. Mix well. Sift together cocoa, flour, salt, baking soda. Add flour mixture to stand mixer and mix on low, scraping down sides until well combined. Add vanilla and mix well. Add chopped mints and chocolate chips, mix just to get them incorporated.

2. Drop cookie dough by the tablespoon on parchment paper on a cookie sheet. Cook 10 – 12 minutes. Cookies will be soft. Let cool.

Makes about 4 dozen cookies.
