Fajita Grilled Cheese

My son asks for a grilled cheese sandwich nearly every day. And I can’t help but to make myself one too. I just can’t get enough grilled cheese. You can make them so many ways, and there’s so many delicious cheeses to try.

For this grilled cheese, I used a Salsa Jack from Great Midwest. It’s a combination of traditional salsa-inspired ingredients like tomato, onion, chives and jalapeño peppers in a delicious jack cheese. This cheese pairs wonderfully witht all types of Mexican inspired dishes.

To make these grilled cheese sandwiches I just sautéed some colorful bell peppers and onions in a skillet. Then I sliced a crusty baguette and layered the bell peppers with Salsa Jack from Great Midwest. I used a good butter and generously buttered the bread before grilling it in my skillet.

You could also add grilled chicken or fajita beef strips to this sandwich to make it even more flavorful.

Fajita Grilled Cheese

Ingredients:

1 tablespoon olive oil
1/4 cup sliced green bell peppers
1/4 cup sliced red bell peppers
1/4 cup sliced yellow bell peppers
1/4 cup sliced red onions
sliced Great Midwest Salsa Jack Cheese
sliced crusty baguette or other hearty bread
butter

Directions:

Heat skillet over medium heat. Drizzle with olive oil and add bell peppers and onion. Sauté until tender and set aside.

Slice bread and butter on one side. Assemble sandwich with cooked peppers, salsa jack cheese and bread. Cook sandwiches in skillet over medium heat until golden brown, flipping once.

Great Midwest sent us a big box of twelve delicious varieties of cheese for us to try last month. We’ve had so much fun trying all the cheeses. We’ve made differnt grilled cheese, macaroni and cheeses, added it to quesadillas, omelets, salads and everything else. We’ve also been snacking on it quite a bit. The flavors are incredible and range from it ranges from sweet, to savory, to spicy. One of my favorite varieties was Mango Fire Cheddar.
