Fried Egg Tacos

My son made it through his first week of school with only three tardies, not counting the one this morning. Monday tardies shouldn’t count, right? My goal is to get him to school on time every other day this week. I’m a little obsessive about getting him to school on time because I don’t want him to be the late kid. That was always me, and it was so annoying. My mom also had a problem with promptness.

At my son’s school, they have a free breakfast, for everyone. It’s a great well-balanced breakfast and there’s always something delicious there, but I want to have breakfast with my son! So to compete with their yummy french toast sticks, chicken biscuits and other great foods I had to get creative, so my husband helped me come up with these amazing breakfast tacos with fried eggs. Take that lunch ladies 🙂

These tacos are so simple, I don’t know why I didn’t think of them. I start by cooking the tortilla first in a little oil, then frying the egg. My husband and my son like their egg yolks broken, and kinda creamy, not runny. I like mine over easy and runny. It’s so good!

For the tortilla, you could also toast them on an open flame, or just simply warm it in the microwave. Then fry your egg however you like it. You can even scramble the egg. I scramble eggs if I’m running short on time. Then for extra protein and loads of yummy flavor, I add Johnsonville Fully Cooked Breakfast Sausages. They can be easily heated in the microwave while you’re making your eggs. They take only 30 seconds and they are ready to eat.

To finish off these tacos, I add chopped spinach for extra nutrition and a few sprigs of cilantro for flavor. My husband and I usually add some hot sauce too. It’s such a quick and tasty breakfast, and good for you too! And did you know that powering up with protein as part of a balanced breakfast can help you feel full for longer.

Fried Egg Tacos

Ingredients:

per taco:
1 corn or flour tortilla
1 tablespoon olive oil
1 egg
Johnsonville Fully Cooked Breakfast Sausages, heated per directions
salt and pepper
2 tablespoons diced tomatoes
3 tablespoons chopped fresh spinach
a few sprigs of cilantro
Mexican or chipotle hot sauce (optional)

Directions:

Warm tortilla in the microwave or in skillet. Fry egg to desired doneness and place on top of tortilla. Top with warmed sausages.

Add diced tomatoes, chopped spinach and cilantro. Add hot sauce if desired.
