We eat alot of fresh corn in the summer. It goes perfect with grilled foods, but is also super easy to make in the oven.

Oven Roasted Corn with Basil Lime Butter

Ingredients:

Corn on the cob (1 per person)
olive oil
salt and pepper
1 stick butter
1/2 cup basil leaves
the juice of 1 lime

Directions:

1. Melt butter and add to blender. Add basil leaves and lime juice. Blend on high until well blended. Pour in a Ziploc bag and place in freezer for 20 – 30 minutes.

2. Preheat oven to 350 degrees. Clean corn on the cob, removing husks and as many silks as possible. Place in a baking dish and drizzle with olive oil and sprinkle with salt and pepper

3. Bake at 350 degrees for approximately 30 minutes.
